Amaranth & Black Cardamom Porridge

 

100g organic amaranth grains

7 dates

1 cinnamon stick

1 black cardamom

A hint of salt

Coconut milk

Preparation:

Put the amaranth grains in a sieve, rinse it properly until the water comes out clear.

In a saucepan, boil the cardamom with a cinnamon stick for 10 minutes, then add the salt, dates, and amaranth grains. Bring to a boil, then reduce heat to low, and simmer until the liquid has been absorbed stirring frequently. This step will take 10 to 12mins.

Now is ready, put the porridge into a glass or bowl, then top it with coconut milk, pollen balls, goji beans, raw honey, cinnamon powder, nuts and the fruit of your choice
