Gluten-free maca pancake

1 1/2 cup old-fashioned oat flakes,  optional 1/2 cup Kañiwa, Sacha Inchi, 
Maca, or Quinoa flour.

 

1 /2  cup coconut, almond or cashew nut milk

4 large eggs or 4 tablespoons chia seeds (previously soaked in water the night before).

1 tablespoon coconut oil or cacao butter or 12-15 Brazil nuts, some coconut oil for cooking

2 tablespoon Raw Honey or 4 dates

2 tablespoon sesame seeds

3 tablespoon of Hemp Powder protein

1/3  teaspoon kosher salt

1/2 teaspoon ground cinnamon

1/6 teaspoon nutmeg

1/6 teaspoon vanilla essence

Preparation:

Add the old-fashioned oats to a blender or food processor. Then give it a go-between medium and high speed, to blend up into the texture that you want. Personally, I prefer to keep the fibers, so I like a rough texture.

Transfer all the dry ingredients into a bowl.

Then gently add the veggie milk and mix it with a fork or a whisk.

Add the honey and coconut oil or cocoa butter melted a bit, if you choose to use Brazil nut instead, this must go in the blender with the oat flakes.

Now, it is time to add the eggs, you can add then to the dry ingredients and gently remove it with a fork or a whisk. If you decide to go for a vegan pancake, now you can replace the eggs for the chia seeds that must be blended for 1 minute or more at high speed.

After mixing all the ingredients, you must have a uniform dough or mixture.

If you wanted to have a very fine texture you could have mixed all this in the blender or food processor. Remember that you are the boss of all your home recipes !

Now, add 1 teaspoon of coconut oil to a pan in medium-low fire and swirl it to coat sides. I like to use a medium pan to have a medium-large pancake, but you can choose a big pan and cook 3 or 4 pancakes at a time. When bubbles appear on the surface, the edges begin to look dry, and the bottoms are golden-brown, about 2-3-4 minutes depends on the size of the pancake. Just flip the pancake(s) and cook until the other side is golden-brown, 2ish minutes more.

Once ready, I like to drizzle 1 teaspoon of raw honey or maple syrup, 1 teaspoon of hazelnut butter   (recipe coming soon). Then I sprinkle some berries on top, and now they are ready to go!
